Today we're in the GialloZafferano kitchen to make one of the most well-known French savoury tarts: Quiche Lorraine. Quiche Lorraine has a base of pastry crust, and has a filling of bacon, Gruyere, cream and eggs. Let's see what we'll need. • 7 oz of smoky bacon • 1 ¼ cups of grated gruyere cheese • 3 egg yolks • 1 whole egg • Pepper, salt and nutmeg • 1 ¼ cups of heavy cream • And 12 oz of pastry dough -- you can find the recipe on this channel Let's see how to make our quiche First of all, roll out the pastry dough with a rolling pin to about 1/8 of an inch thick. I'm using a ceramic pie mould with a 10 inch diameter, but you can use any similar pie tin of whatever material you have on hand. Butter and flour your pie mould, lay the dough inside, press it in and then pierce it all over with a fork. Then, put a sheet of parchment paper inside of the form and into this pour some beans. As you can see, I've pierced the bottom of the crust. Now, place the parchment paper inside, like this, and pour in the dried beans. These will weigh down the dough so it doesn't bubble up. Now all that's left is to bake the crust for 15 minutes at 380F, then take it out, remove the paper and beans and put it back in for another 5 minutes at 350F so that the crust is firm and golden. Divine Lorraine

The Lorraine apartments building came into existence on the corner of Broad and Fairmount in the 1894. Catering to the more-wealthy citizens of the city, the Lorraine boasted an in-house staff as well as electricity in all apartments. A centralized kitchen also meant that there was no need for a personal one, since daily meals could be delivered to you as needed. Not only was this hotel notable for its luxurious amenities, but also as one of the first highrises in all of the city of Philadelphia. The architect behind this beautiful landmark was a Mr.Willis Gaylord Hale, who himself was a resident of the city. Willis Gaylord Hale designed numerous buildings around the city of Philadelphia throughout his years, but as time progressed his heavily Victorian-influenced design work became replaced by the sleeker (and exponentially simpler) "modern" skyscrapers which were being erected after the turn of the 20th century. Sadly most of what Willis Gaylord Hale accomplished during his lifetime no longer stand today. Many of his buildings were razed after the Great Depression to make way for modern structures throughout the city. This makes the Lorraine building all the more important -- it now stands as a symbol of the beauty which was old Philadelphia, and as a reminder of what was lost through the city's short-sighted plans to modernize itself. About The Band: The group's name is derived from leftist politics; "Country Joe" was a popular name for Joseph Stalin in the 1940s, while "the fish" refers to Mao Tse Dung's statement that the true revolutionary must "swim among the people as a fish." The group began with the nucleus of "Country Joe" McDonald (lead vocals) and Barry "The Fish" Melton (lead guitar), recording and performing for the "Teach-In" protests against the Vietnam War in 1965. Co-founders McDonald and Melton added musicians as needed over the life of the band. By 1967, the group included Gary "Chicken" Hirsh (drums) (born in 1940, in Chicago, Illinois); David Cohen (keyboards) (born 8 April 1942, in Brooklyn, New York) and Bruce Barthol (bass) (born 11 November 1947 in Berkeley, California). The 1967 lineup lasted only two years, and by the 1969 music festival Woodstock, the lineup included Greg 'Duke' Dewey (drums), Mark Kapner (keyboards) and Doug Metzler (bass). The band came to perform an early example of psychedelic music. The LP "Electric Music for the Mind and Body" was very influential on early FM Radio in 1967. Long sets of psychedelic tunes like "Section 43", "Bass Strings", "Not So Sweet Martha Lorraine", "Janis" (for and about Janis Joplin) and "Grace" (for singer Grace Slick) (all released on Vanguard Records) were often played back to back on KSAN and KMPX in San Francisco and progressive rock stations around the country. Artist: Jimpster Title: Alsace & Lorraine Label: Freerange Release Date: September 24, 2010 Genre: Deep House "Anyone can overlay loads of sounds and call it deep house. Nobody, however, can do it like Jimpster. This single is his first (remixes notwithstanding) output since Sleeper last year, and he doesn't disappoint. A pedigree in jazz, both from his family and from his early, ambient jungle-based productions, has given him not only a talent with the more tonal, soulful side of dance, but also the ability to produce this type of stuff in an interesting, innovative way. The single's A side is definitely its highlight. A steel drum-flavoured pattern bounces around playfully, and shimmering cascades of fizzing build, recede, build, recede, then build and build—and then the whole thing drops into silence, before exploding gently into a cloud of coloured bubbles. It's lovely and funky in equally large measures. A choppy backbeat, similar to the one in "Alsace" but less driving, pushes "Inside the Loop." Jazzy chords oscillate, and a warm, brief bass motif repeats without variation—but these are only a foundation for the other features which come and go within an improvised, ad-hoc structure. Raw, late '80s handclaps, a glass escalator of an arpeggio and a kind of skipping CD voice effect all make an appearance, not to mention the more subtle elements in the pastiche which all drop in and out to give the track its interest.
